At 7 ft 0 in, he is the tallest fighter in the history of the UFC. Struve made his professional debut for the GFN organization when he was 17, fighting John De Wilde at Gentlemen Fight Night. By late 2008, he had racked up a record of 16–2, losing once via injury to Romualds Garkulis and again in the second round of a Star Of Peresvit tournament in Ukraine, to future Bellator Light heavyweight Champion Christian M’Pumbu. In 2008, Struve negotiated with the DREAM and Affliction promotions, before signing a four-fight deal with the UFC, which he has since won four times. He lost his UFC debut bout at UFC 95 to Junior dos Santos in the first round, after dos Santos stormed Struve with an aggressive flurry of punches. He won his next fight on June 13, 2009, at UFC 99, over Denis Stojnić.

In September 2010, he signed a new four-fights contract with theUFC. He defeated the previously undefeated Sean McCorkle via first-round TKO on December 11, 2010, atUFC 124. On May 17, 2012, Mark Hunt withdrew from the UFC 146 bout against Lavar Lavar Johnson due to an injury and was replaced by Struve. He was expected to face Mark Hunt at UFC 146, but Hunt was forced to pull out of the bout due to a shoulder injury. He is currently ranked No. 4 in the UFC light heavyweight division, with an overall record of 12-3. He has also fought in the welterweight division, where his record is 6-2, with a win and a draw. His most recent fight was against Dave Herman on February 15, 2012. He beat Herman via second round TKO in a slow, slow-motion Tepididid. He also defeated Pat Barry on October 1, 2011, at.
